Not Necessarily One Bowl Chocolate Cake

In answer to various comments re the cake the other night, in case you're interested...

This recipe I got originally from eatingwell.com.

The "Not Necessarily" is mine. I have never understood why it was called "One Bowl..." :)


One Bowl Chocolate Cake
Preheat oven to 350ºF.
Ingredients:
  • Group 1
    • 3/4 c. + 2 T. whole wheat flour
    • 1/2 c. sugar
    • 1/3 c. cocoa
    • 1 t. baking powder
    • 1 t. baking soda
    • 1/4 t. salt
  • Group 2
    • 2 T. canola oil
    • 1 t. vanilla
    • 1/2 c. buttermilk or reg. milk (NOTE: I always use soy milk and it is fine; might be interesting to see how it is with the buttermilk…)
    • 1 large egg, lightly beaten
    • 1/2 c. hard-packed brown sugar
  • 1/2 c. hot strong black coffee or boiling water (I always use coffee)
Grease 9-in round cake pan (other pan similar in size is fine). Cut parchment paper or waxed paper to fit in the bottom of the pan.
  • Mix Group 1 til just blended.
  • Mix Group 2 likewise (without the coffee/water) and add to Group 1. 
  • Beat 2 min.
  • Add coffee/water and beat to blend. Batter will be RIDICULOUSLY thin! Don't worry!
  • Pour into pan and bake 30-35 minutes or until clean toothpick test.
  • Cool on rack 10 minutes then remove from pan and cool rest of the way.
  • Dust with confectioner's sugar or use toppings of your choice.
